I usually prefer a sweet scone, but these were amazing! They are also easy to make.
This recipe makes 16 scones. Since there are only two of us at home, and New Zealand is still in lockdown (therefore we can’t bring any baked goods to our friends/ work colleagues/ neighbours), I decided to make ¼ of the recipe, which makes 4 scones that are easily devoure by two people. I’ve listed the ingredients below:
¼ recipe (4 scones)
- 1.5 onions
- 1 tbsp oil, for cooking
- 1 ½ cups flour
- ½ tbsp baking powder
- ½ tsp salt
- 1 tsp caster sugar
- 1 ½ cups grated tasty cheese
- 150 ml milk (approx.)
- extra milk and grated tasty cheese, for topping
Step by step recipe below!
Pre-heat the oven to 180°C.
Finely slice the onions.
Sauté the onions in the oil on low heat until soft and caramelised (about half an hour), stirring as needed to prevent them sticking to the pan.
Sift the flour, baking powder and salt together.
Add the sugar.
Stir in the grated cheese.
Add the milk.
Mix well to combine, adding a little more milk if necessary.
Turn out onto a floured surface and shape into a rectangle about 1 cm thick.
Cut in half.
Spread one half with the caramelised onion.
Carefully lift the other half and place on top.
Cut into 4 even-sized pieces if you are making ¼ of the recipe like me, otherwise cut into 16 pieces.
Place on a baking tray lined with baking paper and brush with milk. Sprinkle with a little grated cheese.
Bake for approximately 20 minutes, until golden-brown and not too soft to the touch.
