Cardamom-spiced Chia Seed Pudding

This is a lovely chia seed pudding flavoured with coconut, cinnamon, cardamom and mango. Good for breakfast or dessert! It’s very easy to make and you can switch out the fruit to suit the season. It’s also gluten-free and dairy-free.

Combine all the chia seed mix ingredients (chia seeds, coconut water, vanilla extract, ground cinnamon, ground cardamom and desiccated coconut) in a bowl and set aside until the chia seeds have fully hydrated and the mixture is thick (approximately 15 minutes).

Spoon half of the chia mixture into two medium-sized glass bowls or four smaller glass cups. Place a generous layer of mango on top of the chia mix.

Spoon a thick layer of coconut yoghurt (or regular unsweetened Greek yoghurt) on top of that.

Place the passionfruit on top of the yoghurt (I couldn’t find any at the supermarket unfortunately), and then the remaining chia mix.

Decorate with mango and lime slices. Enjoy!

Ingredients

Chia seed mix

  • 4 tbsp white chia seeds
  • 250 ml coconut water
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp ground cardamom
  • ¼ cup coconut chips

Assembly

  • coconut yoghurt (you can substitute with regular unsweetened Greek yoghurt)
  • 1 fresh mango, cut into thin slices
  • 2 passionfruit, pulped
  • 1 lime, sliced finely
  • edible flowers, to garnish
